We're all beyond busy, I know this.  Getting out of the Recipe Rut helps me stay interested in eating well, which (knock on wood) will improve my own quality of life in the long run.  Food shopping and food preparation are a lot of work.  Christina Pirello says "...if you're not willing to work for your health, what are you willing to work for?" (VT, Jan. 2010).  When I come across a recipe that I really like, I'll share it here!  Also, food and wellness related links are included below.

Bubble Gum Ice Cream

This will require a VitaMix or similiar machine which can crush ice.  This is De-Lish!!

  • 1/2 cup Welch's white grape juice concentrate
  • 1/2 banana
  • 2 strawberries (fresh or frozen)
  • 4 peach slices (fresh or frozen)
  • 1/2 cup red cabbage (yes, red cabbage!)
  • 3 cups of ice

Blend on high until firm 30-45 seconds (in VitaMix).  Makes about (4) 1-ounce servings.  Love this one!


I recently subscribed to Vegetarian Times, which now makes a total of 2 publications that I like enough to enjoy receiving in the mail.  The recipes are wonderful.  Recent pleasures include Roasted Brussels Sprouts Medley, Sweet Potato Shepherd's Pie, and Spicy Thai Vegetable Soup (all from the January 2010 issue).
